Crab Stuffed Potatoes

  • 4 medium Idaho potatoes, baked
  • 1 (6 1/2 oz.) can crabmeat or 1/2 lb. fresh crab
  • 1/2 lb. butter, melted with 1/2 c. milk
  • 4 tsp. grated onion
  • 1 c. sharp Cheddar cheese, grated
  • 1/2 tsp. paprika
  • 1 tsp. salt
  • pepper to taste

Directions

    Cut baked potatoes lengthwise.

    Scoop out potatoes and save the skins.

    Beat the potatoes with all ingredients, except crab and paprika.

    Fold in crab meat.

    Refill potato shells and sprinkle with paprika.

    Heat about 15 to 20 minutes in a 350° oven before serving.

    Grated cheese may be sprinkled on top.
