Crab Waffle

  • 3 1/2 ounces potato boiled and mashed
  • 1 crab small dressed, or 175 g can crabmeat, drained
  • 1 egg separated
  • salt
  • pepper
  • oil

Directions

    Mix the mashed potato and crabmeat together, then add the egg yolk, salt and pepper. Whisk the egg white until stiff, then fold into waffle mixture. Heat a waffle iron, brush with oil and heat again if necessary.

    Spoon a quarter of the waffle mixture into the iron and cook for 5 minutes until golden. Repeat with the remaining mix to make four waffles. If you dont have a waffle iron, lightly oil four 10 cm / 4 in cooking rings and set in a lightly oiled non-stick frying pan. Divide the mixture between the rings and press down well. Cook over a medium heat for 3 minutes.

    Remove the rings, flip and cook the second side for 3 - 4 minutes until golden.
