- 1 medium onion, chopped
- 6 green onions, chopped
- 2 ribs celery, chopped
- 1 stick butter
- 4 Tbsp. flour
- salt and pepper to taste
- 1 large can evaporated milk
- 1 c. low-fat milk
- 2 egg yolks, beaten
- 2 lb. white crabmeat
- 1 1/2 c. grated Cheddar cheese
Directions

1Saute onion and celery in butter until soft.

2Add flour and blend.

3Add milk and blend.

4Remove from heat.

5Add egg yolks, crabmeat, salt, pepper and cheese.

6Put in a casserole and top with cheese.

7Bake at 350° for 20 to 30 minutes.
