- 3 Tbsp. butter
- 2 Tbsp. chopped onions
- 1 1/2 lb. crabmeat (imitation may be substituted)
- 1/2 lb. fresh mushrooms, washed and sliced
- 2 c. light fish stock (hot)
- 3 Tbsp. flour
- 1 Tbsp. chopped parsley
- 1/2 c. grated Gruyere cheese
- paprika
- lemon juice
- salt and pepper
Directions

1Melt 1 tablespoon butter in saucepan.

2Add onions.

3Cover and cook 3 minutes over low heat.

4Add crabmeat and mushrooms.

5Season to taste.

6Cover and cook 2 to 3 minutes.

7Add fish stock.

8Cook 2 to 3 minutes.

9Then remove crabmeat and mushrooms and set aside. Reserve cooking liquid.
