Cracked Wheat Salad

Ingredients
- 4 c. water
- 2 c. bulgur
- 1 c. chopped pecans
- 1 c. dried currants
- 4 Tbsp. chopped Italian parsley
- 1 Tbsp. best quality olive oil
- grated zest of 1 medium sized orange
- salt and freshly ground black pepper to taste
Directions

1In a large saucepan, combine water and bulgur.

2Bring to boil, reduce heat and simmer, covered, for 20 minutes or until water is absorbed and bulgur is tender, but not mushy.

3Transfer to a bowl and refrigerate, uncovered, until cool.

4Add pecans, currants, parsley, olive oil, orange zest, salt and pepper to taste.

5Toss thoroughly.

6Serve cool or at room temperature. Serves 8.
