  • 1 pkg. crackers, crushed (Zesta)
  • 3 c. pecans, chopped
  • 6 egg whites
  • 2 c. sugar
  • 1 tsp. cream of tartar
  • 2 c. Cool Whip
  • 1 can coconut

Directions

    Mix the cracker crumbs and pecans; set aside.

    Beat the egg whites until stiff.

    Mix the sugar and cream of tartar to egg whites.

    Add pecans and crackers to egg white mixture.

    Pour into a greased and floured oblong cake pan.

    Bake in a 350° preheated oven for 15 minutes.

    Let cool.

    Spread with Cool Whip; sprinkle with coconut.

    Refrigerate.
