- 3 egg whites
- 1/2 tsp. cream of tartar
- 1 c. sugar
- 1/2 tsp. vanilla
- 16 soda crackers, crumbled real fine
- 1 c. chopped pecans
- 1 c. whipping cream
- 1/2 c. sugar
- 2 to 3 Tbsp. crushed pineapple
Directions

1Beat egg whites until stiff; add 1 cup sugar, cream of tartar and vanilla and beat until smooth.

2Fold in pecans and cracker crumbs.

3Put into well-greased pie pan.

4Bake 35 minutes at 300°. When cool, beat 1 cup of whipping cream, adding 1/2 cup of sugar. Remove from mixer and stir in 2 or 3 tablespoons of crushed pineapple.

5Spread this whipped cream mixture over cooled crust and sprinkle with coconut.

6This must be refrigerated and is actually better made the day before you plan to eat it.
