Cracker Scallops

Ingredients

  • 2 lb. scallops
  • freshly ground black pepper
  • 3 Tbsp. olive oil
  • 2 Tbsp. finely chopped garlic
  • 1/2 c. finely diced sun-dried tomatoes in oil
  • 2 c. crushed Premium saltine crackers
  • juice of 1 lemon
  • 3 Tbsp. chopped parsley
  • 2 Tbsp. unsalted butter

Directions

    Dry scallops in paper towels.

    Season with pepper.

    Heat oil in large skillet over medium-high heat until very hot.

    Add scallops, then garlic to skillet.
  5. 5
    Immediately add tomatoes and toss.

    Add crackers, lemon juice, 2 tablespoons of parsley and butter.

    Cook and stir until scallops are cooked through and crackers are browned.

    Garnish with remaining parsley.
