Ingredients
- 2 lb. scallops
- freshly ground black pepper
- 3 Tbsp. olive oil
- 2 Tbsp. finely chopped garlic
- 1/2 c. finely diced sun-dried tomatoes in oil
- 2 c. crushed Premium saltine crackers
- juice of 1 lemon
- 3 Tbsp. chopped parsley
- 2 Tbsp. unsalted butter
Directions

1Dry scallops in paper towels.

2Season with pepper.

3Heat oil in large skillet over medium-high heat until very hot.

4Add scallops, then garlic to skillet.

5Immediately add tomatoes and toss.

6Add crackers, lemon juice, 2 tablespoons of parsley and butter.

7Cook and stir until scallops are cooked through and crackers are browned.

8Garnish with remaining parsley.

9Makes 4 servings.
