- 1 medium red pepper, cut in strips
- 1 small onion, sliced
- 1 small zucchini, sliced
- 1/2 tsp. dried oregano
- 1 Tbsp. butter or oleo
- 32 Premium crackers
- 4 oz. reduced fat Cheddar cheese (makes 1 c. shredded cheese)
- 2 c. skim milk
- 1 c. Egg Beaters
Directions

1In large skillet over medium heat, add peppers, onion, zucchini and oregano.

2Cook in butter until tender.

3Spray 9 x 9 x 2-inch baking pan.

4Layer half of each crackers, vegetable mixture and cheese; repeat layers, ending with cheese.

5In bowl, beat milk and Egg Beaters slightly.

6Pour over cheese layer.

7Bake at 350° for 30 to 35 minutes until knife comes out clean.
