- 1 1/2 c. corn meal
- 1/4 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 large egg, lightly beaten
- 2 c. buttermilk
- 1 c. cracklings
Directions

1Combine the first 4 ingredients in a large bowl.

2Add egg and buttermilk, stirring mixture just until dry ingredients are moistened.

3Stir in cracklings.

4Place in a well-greased 10-inch cast-iron skillet in a 450° oven for 4 minutes, or until hot. Remove from oven.

5Pour batter into skillet.

6Bake at 350° for 25 minutes, or until golden brown.

7Yields 8 to 10 servings.
