  • 4 oz. finely diced pork fat (1 c.)
  • 1 c. corn meal
  • 1 c. all-purpose flour
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1 c. buttermilk
  • 2 beaten eggs

    Fry pork fat until crisp.

    Drain, reserving 1/3 cup of drippings.

    In large bowl, mix together corn meal, flour, baking soda and salt.

    Add buttermilk, eggs and drippings.

    Beat until smooth.

    Stir in cracklings.

    Bake in a greased 10-inch skillet at 425° until done (about 15 to 20 minutes).
