  • 2 c. cornmeal
  • 1/2 c. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. sugar
  • 2 c. pork cracklings
  • 2 c. buttermilk
  • 1 egg, beaten
  • 1/4 c. bacon drippings

Directions

    Combine first 6 ingredients in a large bowl.

    Add buttermilk, egg and bacon drippings.

    Stir until dry ingredients are moistened.

    Spoon batter into a preheated, greased iron skillet and bake at 400° for 20 to 30 minutes.
