  • 2 c. cornmeal
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs, beaten
  • 2 c. buttermilk
  • 1/4 c. bacon drippings
  • 1 c. cracklings

    Combine cornmeal, soda and salt, mixing well.

    Add eggs, buttermilk and bacon drippings; stir until smooth.

    Stir in cracklings.

    Place a well-greased 9-inch square baking pan in a 450° oven for 3 minutes, or until hot.

    Remove pan from oven. Pour batter into pan.

    Bake at 450° for 25 minutes, or until golden brown on top.
