- 2 1/2 c. self-rising cornmeal
- 1/2 c. self-rising flour
- 3 to 4 eggs
- 2 c. buttermilk (watch texture)
- 2 c. cracklings
Directions

1Stir together dry ingredients and cracklings.

2Add milk and eggs.

3Put into a hot skillet (iron) which has been prepared with oil and a dusting of cornmeal to keep from sticking.

4Bake at 350° until done, approximately 30 minutes to brown correctly.
