  • 2 1/2 c. self-rising cornmeal
  • 1/2 c. self-rising flour
  • 3 to 4 eggs
  • 2 c. buttermilk (watch texture)
  • 2 c. cracklings

Directions

    Stir together dry ingredients and cracklings.

    Add milk and eggs.

    Put into a hot skillet (iron) which has been prepared with oil and a dusting of cornmeal to keep from sticking.

    Bake at 350° until done, approximately 30 minutes to brown correctly.
