Cranberry Apple Bread

- 2 c. peeled, chopped apples
- 2 Tbsp. oil
- 1 1/2 c. flour
- 1/2 tsp. baking soda
- 1 c. fresh or frozen cranberries
- 3/4 c. sugar
- 1 egg
- 1 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 c. chopped walnuts
Directions

1Preheat oven to 350°.

2Grease 8 1/2 x 4 1/2-inch loaf pan. Combine apples, sugar and oil in medium mixing bowl.

3Add eggs; mix well.

4Combine dry ingredients in separate bowl.

5Add to apple mixture, mixing just until dry ingredients are moist.

6Stir in cranberries and walnuts.

7Spread batter evenly in pan.

8Bake 1 hour or until a toothpick comes out clean.

9Makes 1 loaf.
