- 2 c. flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 egg, beaten
- juice and grated rind of 1 orange
- 2 Tbsp. shortening
- boiling water
- 1 c. cranberries, cut in half
- 1 c. chopped nuts
Directions

1Sift the flour, sugar, baking powder, soda and salt.

2Combine juice, rind, shortening and boiling water to make 3/4 cup liquid. Add egg and add to dry ingredients.

3Stir only enough to mix. Stir in nuts and cranberries; let stand 20 minutes.

4Make shallow in center of pan.

5Bake 60 or 70 minutes in a 350° oven.

6Yields 1 loaf.
