Cranberry Bread

Ingredients

  • 2 c. all-purpose flour
  • 1/2 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. each: salt and baking soda
  • 1 egg, beaten
  • 10 Tbsp. orange juice
  • 1/4 c. butter or margarine, melted and cooled
  • 1 c. fresh or frozen cranberries, cut in halves
  • 1/2 c. chopped walnuts

Directions

    In a bowl, stir together the flour, sugar, baking powder, salt and baking soda.

    Make a well in the center of this flour mixture. Add the egg, orange juice and butter; stir just until dry ingredients are moistened.

    Stir in cranberries and walnuts.

    Pour batter into a greased and floured 5 x 9-inch loaf pan.

    Bake at 350° until bread is golden brown on top and a wooden pick inserted in center comes out clean (about 45 minutes).

    Turn out onto rack; let cool completely.
