  • 1 c. sugar
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • grated rind and juice of 1 orange
  • 2 Tbsp. shortening, melted
  • hot water
  • 1 beaten egg
  • 1 c. cranberries, cut in half
  • 3/4 c. chopped nuts

Directions

    Sift together first 5 ingredients. Measure juice, rind and shortening. Add hot water to make 3/4 cup liquid. Add this and egg to dry ingredients. Mix well but do not beat. Add cranberries and nuts. Pour into 9 x 5-inch loaf pan, greased on bottom only. Bake at 325° for about 1 hour.
