  • 2 c. cranberries, cut in half or wide sliced in processor
  • 2 c. flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 4 c. shortening
  • 1 egg
  • 3/4 c. orange juice or crushed pineapple
  • 2 Tbsp. orange rind
  • 1/2 c. nuts, chopped

Directions

    Sift dry ingredients and cut in shortening.

    Combine orange juice and rind or crushed pineapple (small can) and beaten egg; pour over dry mixture.

    Stir to dampen and fold in cranberries and nuts.

    Bake in greased loaf pan for 1 hour at 350°.
