- 1 lb baby tomatoes
- 2 cloves garlic, thinly sliced
- 1 tbsp olive oil
- 2 tsp balsamic vinegar
- None None vegetable oil, for deep-frying
- 1/3 cup loosely packed fresh basil leaves

1Preheat oven to 350°F.

2Arrange tomatoes on a baking tray. Combine garlic, oil and vinegar then pour over tomatoes and season to taste. Roast for 10 mins, or until tomatoes soften.

3Meanwhile, heat vegetable oil in a small saucepan. Deep-fry basil until crisp. Drain on paper towels.

4Serve tomatoes sprinkled with fried basil.
