  • 3 cups Sugar
  • 4 whole Eggs
  • 1 cup Softened Butter Plus 1-2 Tablespoons To Saute Nuts
  • 3 cups Flour
  • 2 Tablespoons Extract (vanilla Or Almond)
  • 4-1/2 cups Fresh Cranberries
  • 1/2 cups Chopped Pecans
  • 1/2 cups Chopped Walnuts

    1. Preheat oven to 350 F.

    2. Cream sugar and eggs, then beat in 1 cup butter. Mix in the flour and the extract.

    3. Stir in fresh cranberries.

    4. Saute chopped pecans and chopped walnuts in 1 - 2 tablespoons butter.

    5. Add nuts to the batter.

    6. Bake in two PAM-sprayed 8 x 8 pans for 30 minutes.

    7. Reduce oven temperature to 325 F and bake for 35 - 40 minutes more.
