- 2 1/2 lb. shoulder of lamb
- 2 large carrots
- 6 small onions
- 2 lb. potatoes
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Have the meat cut in pieces as desired for serving size.

2Cover with about 4 cups water (boiling); bring slowly back to boiling point.

3Add the seasonings.

4Add the carrots, cut in strips or thick slices; let simmer for 45 minutes.

5Add onions and potatoes; let simmer until potatoes and meat are both tender, about 1 hour. Garnish with chopped parsley when serving.

6To be served with a salad and a dessert of shamrock ice cream molds and little cookies.
