Cranberry Cake

Ingredients

  • 1 c. sugar
  • 2 1/2 c. self-rising flour
  • 1/2 tsp. soda
  • 1 c. chopped dates
  • 1 c. chopped pecans
  • rind of 2 oranges, grated
  • 1 c. raw cranberries (can chop these)
  • 1 c. buttermilk
  • 3/4 c. salad oil
  • 2 eggs, beaten

Directions

    Mix first 3 ingredients together.

    Mix next four ingredients and add to dry ingredients.

    Mix buttermilk, oil and eggs.

    Add to mixture and stir until well mixed.

    Bake at 325° for 1 hour. While warm, pour glaze over cake.

    Wrap in tinfoil.

    Keep in refrigerator.
