Cranberry Chicken

Ingredients
- 1/4 c. oleo
- 4 whole chicken breasts, halved
- 1/2 chopped onion
- 2 c. apple cider
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. lemon peel
- 1 Tbsp. cornstarch
- 1/3 c. sugar
- 2 c. fresh cranberries
- 4 bananas, sliced
Directions

1Melt oleo in a large skillet.

2Add the chicken and brown on all sides over medium heat.

3Add the chopped onion to the skillet and cook until tender, about 5 minutes.

4Add 1 1/2 cups cider, salt, pepper and lemon peel.

5Cover the skillet and let ingredients simmer 30 minutes.

6Remove the chicken

7and keep warm. Combine cornstarch with the remaining 1/2 cup cider and add to the skillet with the sugar and cranberries.

8Cook 10 minutes, stirring occasionally.

9Return chicken to the skillet along with the sliced bananas.

10Heat all ingredients to serving temperature.
