- 23 cup shortening
- 1 13 cups sugar
- 3 eggs
- 12 cup fat free sour cream
- 1 14 teaspoons lemon extract
- 2 13 cups unbleached all-purpose flour
- 1 14 teaspoons baking powder
- 1 14 teaspoons baking soda
- 1 teaspoon salt
- 1 cup buttermilk
- 1 14 cups dried cranberries
Directions

1In a large mixing bowl, cream shortening and sugar.

2Add eggs one at a time beating well after each one.

3add sour cream and lemon extract, mix well.

4Combine the flour, baking powder, baking soda and salt, mix well.

5Add to creamed mixture alternately with the buttermilk.

6Fold in cranberries.

7Pour into 4 greased 5 3/4x3x2 loaf pans.

8Bake at 350 for 40-50 minutes.

9Cool 10 minutes beforeremoving from pans.

10These freeze very well.
