- 2 eggs
- 1 cup orange juice
- 1/3 cup melted butter
- 1 cup 100% wheat bran high fibre cereal
- 3/4 cup chopped dried apricots
- 13/4 cups all purpose flour
- 1/2 cup packed brown sugar
- 2 tsp. baking powder
- 1 cup cranberries (fresh or frozen)
Directions

1WHISK together eggs, orange juice and butter.

2Stir in cereal and apricots; let stand 5 minutes.

3MIX flour, brown sugar and baking powder in large bowl.

4Add cereal mixture to dry ingredients, stirring just until moistened.

5FOLD in cranberries (do not overmix).

6Spread evenly in greased 9 x 5 inch (23 x 13 cm) loaf pan.

7BAKE at 350F (180C) for 55 to 60 minutes until tester inserted in centre comes out clean.

8COOL in pan 10 minutes; turn out onto rack to cool completely.

9Store in airtight container
