  • 2 eggs
  • 1 cup orange juice
  • 1/3 cup melted butter
  • 1 cup 100% wheat bran high fibre cereal
  • 3/4 cup chopped dried apricots
  • 13/4 cups all purpose flour
  • 1/2 cup packed brown sugar
  • 2 tsp. baking powder
  • 1 cup cranberries (fresh or frozen)

Directions

    WHISK together eggs, orange juice and butter.

    Stir in cereal and apricots; let stand 5 minutes.

    MIX flour, brown sugar and baking powder in large bowl.

    Add cereal mixture to dry ingredients, stirring just until moistened.

    FOLD in cranberries (do not overmix).

    Spread evenly in greased 9 x 5 inch (23 x 13 cm) loaf pan.

    BAKE at 350F (180C) for 55 to 60 minutes until tester inserted in centre comes out clean.

    COOL in pan 10 minutes; turn out onto rack to cool completely.

    Store in airtight container
