  • 2 c. flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 2 Tbsp. shortening
  • 1 egg, beaten
  • grated rind and juice of 1 orange plus fresh or diluted frozen orange juice to make 3/4 c.
  • 1 c. raw cranberries, cut in halves

Directions

    Sift together flour, sugar, baking powder, salt and soda. Mix in shortening thoroughly and orange rind and juice. Add beaten egg. Fold in cranberries. Pour into 9 x 5 x 3-inch greased loaf pan. Bake at 350° until toothpick stuck into center comes out clean, for 1 hour.
