Cranberry Pineapple Fluff

Ingredients

  • 2 (10 ounce) packages fresh cranberries, cleaned and drained
  • 1 1/2 cup sugar
  • 1 (20 ounce) can crushed pineapple, drained
  • 2 cup heavy whipping cream, whipped until firm
  • 1 (10 ounce) bag mini marshmallows
  • 1/2 to 1 cup chopped walnuts or pecans (optional)
  • 2 tsp vanilla (I use double strength and a bit extra from Penzeys)

Directions

    Grind the cranberries in a food processor or blender.

    In a large bowl, combine the cranberries, drained pineapple, and sugar.

    Add the vanilla and mix well.

    Thoroughly fold in the whipped cream, then the marshmallows and nuts, if using.

    Refrigerate for several hours before serving.
