  • 2 c. sugar
  • 1/2 c. oil
  • 1/2 c. egg substitute
  • 1 c. canned pumpkin
  • 2 1/4 c. all-purpose flour
  • 1 Tbsp. pumpkin pie spice
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. chopped cranberries

Directions

    Mix sugar, oil, egg substitute and pumpkin together. In a large bowl, combine flour, pumpkin spice, baking soda and salt. Make a well in the dry ingredients and pour in pumpkin mixture. Mix until just moistened. Stir in cranberries. Divide batter among 2 greased and floured loaf pans. Bake at 350° for 1 hour or until toothpick comes out clean.
