  • 2 1/4 cups self-rising flour
  • 1/3 cup granulated sugar
  • 7 tbsp unsalted butter, chopped
  • 4 oz dried craisins/cranberries
  • 1/4 cup flaked coconut
  • 3.5 oz white chocolate, finely chopped
  • 1 None large egg, lightly beaten
  • 1/2 cup 2% milk
  • 1 tsp vanilla extract
  • 1 tbsp demerara sugar

    Preheat oven to 400°F. Grease 2 baking trays.

    Sift flour and sugar into a medium bowl. Cut in butter. Stir in craisins, coconut, chocolate, egg, milk and vanilla until just combined. Drop heaped tablespoons of mixture about 2 inches apart onto prepared trays. Sprinkle with demerara sugar. Bake for about 15 mins. Let cool on trays.
