Cranberry Salsa

- 1 (12 oz.) bag fresh cranberries
- 2 fresh jalapeno peppers, seeded and minced
- 4 Tbsp. chopped cilantro
- 2 Tbsp. grated onion
- 1/3 c. fresh lime juice
- 1/2 c. sugar
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper
Directions

1Rinse the cranberries, discarding any stems or blemished berries.

2Transfer them to a medium saucepan; cover with water. Bring to a boil and cook over medium heat for 2 minutes.

3Drain well and transfer to a plastic or glass container.

4Add the remaining ingredients and combine with a wooden spoon.

5Cover and refrigerate; use when needed.

6This can be used up to 1 week.
