Cranberry Salsa

- 12 ounces cranberries (fresh or frozen)
- 34 cup sugar
- 14 cup red onion, finely diced
- 2 tablespoons finely chopped cilantro
- 1 tablespoon jalapeno pepper, seeded and minced
Directions

1In a saucepan, combine cranberries, sugar and 3/4 cup water.

2Bring to a boiling, stirring occasionally until cranberries pop and mixture thickens slightly, 5-7 minutes.

3Remove from heat and let stand 30 minutes, until cool.

4Stir in red onion, cilantro and jalapeno pepper.

5Cover and refrigerate for at least 2 hours before serving.
