  • 2 c. fresh cranberries, coarsely ground
  • 1 c. sugar
  • 1 (11 oz.) can mandarin oranges, well drained
  • 1 (8 oz.) can pineapple tidbits, well drained
  • 1 c. coconut
  • 1 c. sour cream
  • 2 envelopes unflavored gelatin
  • 1 c. whipping cream

Directions

    Combine cranberries and sugar; mix well to dissolve sugar. Drain and reserve liquid from oranges and pineapple.

    Add fruit and coconut to cranberries.

    Sprinkle gelatin over 3/4 cup combined juices to soften.

    Heat over medium temperature to dissolve gelatin.

    Add to fruit.

    Fold in sour cream.

    Whip the cream and fold into fruit mixture.

    Place in 2-quart mold.

    Chill overnight.
