Ingredients

  • 2 c. fresh cranberries, coarsely chopped
  • 1 c. sugar
  • 1 (11 oz.) can mandarin oranges, drained
  • 1 (8 oz.) can pineapple chunks, drained
  • 1 c. coconut
  • 2 envelopes unflavored gelatin
  • 1 c. sour cream
  • 1 c. Cool Whip

Directions

    Combine cranberries and sugar.

    Mix thoroughly to dissolve sugar.

    Drain well and reserve liquid from oranges and pineapple. Add oranges, pineapple and coconut to cranberries; sprinkle gelatin over 3/4 cup of combined juices to soften.

    Place over medium heat, stirring constantly to dissolve gelatin.

    Add to fruits.

    Fold in sour cream and Cool Whip.

    Refrigerate overnight.
