  • 1 onion, quartered
  • 1 lemon, quartered
  • 1 garlic clove, halved
  • 1 bay leaf
  • 6 cups water
  • 1 tablespoon salt
  • 2 teaspoons red peppers
  • 2 lbs whole crawfish

Directions

    Tie onion, lemon, garlic, and bay leaf in a cheesecloth bag.

    Place bag in large Dutch oven, and add water, salt, and red pepper, bring to a boil, and boil 5 minutes.

    Add crawfish and cook 5 minutes.

    Drain crawfish, peel and serve warm or chilled.
