- 1 onion, quartered
- 1 lemon, quartered
- 1 garlic clove, halved
- 1 bay leaf
- 6 cups water
- 1 tablespoon salt
- 2 teaspoons red peppers
- 2 lbs whole crawfish
Directions

1Tie onion, lemon, garlic, and bay leaf in a cheesecloth bag.

2Place bag in large Dutch oven, and add water, salt, and red pepper, bring to a boil, and boil 5 minutes.

3Add crawfish and cook 5 minutes.

4Drain crawfish, peel and serve warm or chilled.
