Crawfish Casserole

Ingredients
- 2 pkg. yellow saffron rice
- 1 lb. crawfish, peeled
- 1 can Ro-Tel tomatoes, diced
- 1 pkg. shredded Mexican Velveeta
- chopped onion (to taste)
- chopped bell pepper (to taste)
- 1 small can Pet milk
Directions

1Cook rice according to package instructions.

2Saute chopped onion and bell pepper until soft.

3Add Ro-Tel tomatoes and Pet milk.

4Let simmer about 5 minutes.

5Add crawfish and simmer 5 to 10 minutes.

6Mix rice and crawfish mixture and put in casserole dish.

7Sprinkle top with shredded Mexican Velveeta.

8Cook at 350° for about 15 to 20 minutes or until cheese is melted.

9(Good with shrimp, also.)
