Crawfish Corn Bisque

  • 1 lb. crawfish tails
  • 1 c. water
  • 1 c. chopped onion
  • 1 Tbsp. corn oil margarine
  • 1 (16 oz.) can cream-style corn
  • 2 c. skim milk
  • 1/2 tsp. salt
  • 2 c. crawfish liquid
  • 1/2 tsp. white pepper
  • 1/8 tsp. cayenne pepper
  • 1 1/4 c. instant potato flakes
  • 1/2 tsp. chopped onion tops (for garnish)
  • 1/4 tsp. parsley, minced (for garnish)

Directions

    Cook crawfish in water for 15 minutes over very low heat. Drain and reserve liquid.

    Chop tails into coarse pieces.

    Saute onions in margarine.

    Process corn in blender to break kernels.
