- 1 head lettuce, chopped
- 1 pkg. taco seasoning
- 1 can Ro-Tel tomatoes
- 1 can Cheddar cheese soup
- corn chips
- 1 lb. ground beef
- 1 (15 oz.) can tomato sauce
Directions

1Cook rice according to package directions.

2Brown ground beef and add tomato juice and the package of taco seasoning.

3Simmer 15 to 30 minutes.

4Separately cook cheese sauce; mix Cheddar cheese soup and Ro-Tel tomatoes.

5Simmer 15 to 30 minutes.

6To serve, layer corn chips, rice and meat sauce.

7Then add lettuce and top with cheese sauce.
