- 1 large onion, chopped
- 3 celery sticks, thinly sliced
- 4 bell peppers, chopped
- 1/2 lb. butter
- 3/4 c. flour
- 1 lb. crawfish tails and fat
- 3 small cans creamed corn
- 3 potatoes, boiled and cubed
- salt, white and black pepper to taste
- 1/2 gal. milk
- 2 pt. whipping cream
Directions

1Saute onion, celery and bell pepper in butter.

2Add flour; cook five to ten minutes.

3Add other ingredients plus 1/2 gallon milk and two pints whipping cream.

4Add crawfish and simmer.
