- 2 c. yellow corn meal
- 1 can yellow creamed corn
- 1 1/2 c. grated Cheddar cheese
- 2 jalapeno peppers, finely chopped
- 1/2 c. bell pepper, finely chopped
- 3/4 c. chopped green onion
- 1 c. milk
- 1 lb. crawfish tails
- 3 eggs
- 3 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. soda
- 1 onion, minced
- 1/2 c. cooking oil
Directions

1Saute onion and bell pepper in small amount of butter.

2Cook until onion becomes transparent.

3Add chopped jalapeno pepper. Set aside.

4Mix in all ingredients, except crawfish.

5Add cooked onion and pepper.

6Stir in crawfish tails.

7Pour in lightly greased pan.

8Bake in preheated oven at 400° for 35 to 45 minutes.
