Crawfish Cornbread Dressing

  • 6 pkg. Mexican cornbread mix
  • 1 can whole kernel corn
  • 1 can cream-style corn
  • 2 cans cream of chicken soup
  • 2 cans cream of celery soup
  • 2 cans chicken broth
  • 3 (1 lb.) pkg. peeled crawfish or crabmeat
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 1 whole stalk celery, chopped
  • 1 whole bunch green onions, chopped

Directions

    Prepare cornbread mix according to package directions.

    Bake. Mix all other ingredients and bring to a boil.

    Pour mixture into crumbled cornbread.

    Spread, after mixing, into pan and bake at 350° for about 20 minutes.

    (Add more seasoning if desired.) Yields enough for 20 to 30 people.
