- 12 cup butter
- 2 cups chopped onions
- 1 cup chopped celery
- 1 cup chopped green bell pepper
- 2 lbs crawfish tails
- 3 teaspoons chopped garlic
- 2 bay leaves
- 2 cups water
- 1 12 tablespoons flour
- 1 teaspoon cayenne
- 1 teaspoon kosher salt
- 14 cup chopped parsley
- 12 cup chopped scallion
Directions

1In a large non stick pan melt butter.

2Add celery, onions, peppers and saute until soft.

3Add garlic and bay leaves; saute 1-2 minutes more.

4Dissolve flour and water pour into pan cook for 10 to 12 minutes more.

5Add crawfish and cayenne; stir cook for 5 minutes more.

6Add scallions and parsley; cook 3 to 4 minutes more.

7Serve over any type rice.
