- 6 Tbsp. butter
- 2 c. chopped onions
- 2 cloves minced garlic
- 2 Tbsp. chopped green peppers
- 2 Tbsp. minced parsley
- 1/4 c. chopped celery
- 2 Tbsp. green onion tops, chopped fine
- 1 lb. or 2 1/2 c. crawfish meat
- 1/4 tsp. black pepper
- 1/4 tsp. cayenne red pepper
Directions

1Melt butter in heavy pot.

2Saute onions, pepper and celery until onions are clear.

3Add 1/8 cup water and simmer, covered, until vegetables are tender, about 15 minutes.

4Stir occasionally. Add crawfish and other seasonings to blend.

5Serve over hot steamed rice.

6Makes 4 to 5 servings.
