- 1 medium onion, chopped
- 1/2 medium bell pepper, chopped
- 1/2 celery rib, chopped
- 1 tsp. minced garlic
- 1 stick margarine
- 1 can diced Ro-Tel
- 2 cans whole kernel corn, drained
- 1 can creamed corn
- 1 lb. crawfish
- 2 Tbsp. cornstarch
- 1/2 c. water
- 1/2 lb. shredded Cheddar cheese
Directions

1Saute first four ingredients in margarine.

2Add Ro-Tel.

3Cook 30 minutes.

4Add corn.

5Cook 30 minutes.

6Add crawfish, salt and pepper.

7Cook 15 minutes.

8Thicken with cornstarch and water. Cook 5 minutes.

9Pour into casserole dish.

10Top with Cheddar cheese.

11Bake 15 minutes in 350° oven.
