  • 1 large chopped onion
  • 1/2 c. butter
  • 1/2 c. flour
  • 1/2 tsp. dried thyme, crushed
  • 2 lb. crawfish, peeled and cleaned (crabmeat or shrimp can be substituted for crawfish)
  • 3 Tbsp. parsley
  • 1/2 tsp. salt
  • 1 1/3 c. water
  • 1 1/2 c. milk
  • 2 (9-inch) pie shells
