Crawfish Quiche

Ingredients
- 1 lb. cleaned crawfish tails
- 1 c. sliced, fresh mushrooms
- 1 c. chopped green onions and tops
- 1/2 c. melted butter
- 4 eggs, well beaten
- 1/2 c. half and half milk or light cream
- 1 tsp. salt
- 1/2 tsp. dry mustard
- 1 c. shredded Mozzarella cheese
- 1 unbaked 9-inch deep pie shell
Directions

1Saute mushrooms and green onions in butter until tender.

2Set aside.

3In large bowl, combine eggs, half and half, salt, dry mustard and cheese.

4Fold in crawfish, mushrooms and onions.

5Pour mixture into shell.

6Bake at 400° for 15 minutes.

7Reduce heat to 300° and continue to bake for 30 minutes or until knife inserted in center comes out clean.

8Allow to stand 5 minutes before serving.

9Serves 6.
