Crawfish Vermicelli

Ingredients
- 1 lb. crawfish with fat
- 1 stick butter or oleo
- 1 large onion, chopped
- 1/2 bell pepper, chopped
- 1 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. red pepper
- 1/2 pt. sour cream, room temperature
Directions

1Saute onion and bell pepper in butter until clear.

2Coat crawfish with crawfish fat.

3Mix flour with crawfish and coat. Add crawfish to onions and bell pepper.

4Add salt and red pepper. Blend all ingredients together and cook, covered, over low heat, no more than 10 minutes, until done.

5Let cool slightly before adding sour cream (it will separate if crawfish is too hot).

6May be reheated but do not boil.

7Serve over vermicelli.
