Ingredients

  • 1 lb lean ground beef
  • 1 (19 ounce) can kidney beans, drained and rinsed
  • 1 12 cups salsa
  • 12 cup water
  • 1 (1 1/4 ounce) package taco seasoning
  • 2 medium tomatoes, diced
  • 2 cups tortilla chips, slightly crumbled
  • 1 cup cheddar cheese, shredded
  • 2 cups lettuce, shredded
  • 1 cup sour cream

Directions

    In a large skillet, cook the ground beef over medium heat, until no longer pink, 5 minutes, breaking up chunks, drain fat.

    Add the beans, salsa, taco seasoning and water, reduce heat and continue to cook, stirring often, for 8-10 minutes, until the mixture thickens slightly.

    Sprinkle the meat mixture with the tomatoes, followed ny the tortilla chips and the shredded cheese, cover and cook 3-4 minutes, until the cheese melts.

    Remove lid and remove from heat, sprinkle with lettuce, dollop with sour cream.

    Serve out of the skillet.
