  • 1/2 c. nuts, finely chopped (optional)
  • 2 c. sugar
  • 3/4 c. light corn syrup
  • 1/2 c. butter
  • 2 c. whipping cream

Directions

    Butter an 8 x 8-inch pan.

    Combine sugar, syrup, butter and half the cream in a large pan.

    Heat to boiling over medium heat, stirring constantly.

    Stir in remaining cream.

    Cook over medium heat, stirring occasionally until mixture reaches 245° on candy thermometer or small amount of mixture dropped into very cold water forms a firm ball.

    Add vanilla (1 teaspoon) and spread immediately into pan.

    Cool.

    Cut into 1-inch squares.
