Cream Of Broccoli Soup

Ingredients
- 3 c. fresh uncooked broccoli or 2 boxes frozen broccoli (uncooked)
- 1 medium diced onion
- 4 Tbsp. butter or margarine
- 1/2 c. flour
- 2 cans (15 oz. size) chicken broth
- 2 c. cream (half and half)
- salt and pepper to taste
Directions

1If using fresh broccoli, finely chop or put through food processor; if using frozen broccoli, thaw and drain.

2Melt butter and saute onion.

3Add chopped broccoli and cook one minute.

4Stir in flour, salt and pepper.

5Gradually stir in broth.

6Stir constantly until thickened.

7Reduce heat to low.
-
8Cover and simmer 5 to 10 minutes, until broccoli is tender.

9Stir in cream.
-
10Heat short time until hot.

11Serve.
